The chilled water is just to keep the NAS box to a sensible temperature, under normal (running, no fire present) conditions. The general idea of a fire safe is that the fire brigade turn up and put the fire out, before the contents of the safe are damaged. :).

I've got one office that I look after that does weekly backups that are taken off-site, but just uses flash drives in cheap plastic fire chests in metal filing cabinets for daily incrementals. They are left wired-in, using low profile USB leads. I'm not too worried - the local fire station is about 400m away :)
