Both the Heckler & Koch VP70 and the Beretta 93 were
three-round-burst weapons. Still, neither of those recent attempts at
a shoulder-stockable full-auto pistol made it in the market.

That'd be why they make them... then.
Aren't both the Heckler & Koch VP70 and Beretta 93 long out of
production now?
Heckler & Koch in particular saw a much-better alternative to
full-auto pistols; it was a class of considerably larger "personal
defense weapons" that still were considerably smaller than their
regular submachine guns - even if derived from them. It's the PDW
concept - not full-auto pistols - that Heckler & Koch stayed with to
this day.
