You won't find any adaptations in slowly reproducing species as there 
aren't enough generations. You wouldn't have found any at the time of 
previous extinctions either. Most species disappeared leaving a wide 
open ecosystem for the few survivors to exploit. The adaptations 
happened to the survivors *after* the catastrophes. You won't won't see 
the speciations until after the human catastrophe when the ecological 
niches are empty (assuming we allow such niches to reappear).

However, you can see adaptations in quickly reproducing species. 
Antibiotic resistance, pesticide resistance, etc.

And then there are those species that are just happen to be fairly close 
to what we want or we are to what they need, such as dogs (wolves) and 
rats respectively.
