I recall videos of incoming "Scuds" launched against isreal in the
"Gulf War." Sort of a fast moving contrail- at night, I think.

different from a V-2.

The Scud was developed from the V2. Apart from not needing to be fuelled
just before launch, the early Scuds were virtually indistinguishable from
the V2.

Were any incoming V-2s spotted visually in London, or Antwerp?

Not SFAIK. By they time they arrived over London, they would have been on a
ballistic descent, so there would have been no engine burn to see. They were
however tracked by Chain Home radar, which, being an inefficient design,
sent lobes of signals into the stratosphere. Until the V2s started being
picked up by those lobes, they were simply thought to be wasted energy.
However, the V2s were on the radar for only a few minutes, which was not
enough time to plot accurately where they would fall, so the information
could not be used to give a warning. What it did reveal, after analysis, was
where they were launched from, which then got a visit from the RAF.
