Here are some of the ones I have found most useful:

Baxter, Angus. 1987. In search of your British and Irish roots :
a complete guide to tracing your English, Welsh,
Scottish, and Irish ancestors. Genealogical
Publishing: Baltimore.
Dewey: 929.10892 BAXT
One of the most comprehensive guides to
British (as opposed to purely English)
genealogy available.

Gardner, David E. Smith, Frank. 1978 [1959] Genealogical Research
in England and Wales. Vol II. Salt Lake City:
Bookcraft.
Comprehensive coverage of probate records.
Also has something on military records. Good
descriptions of counties and ecclesiastical
jurisdictions, and locations of records,
though pre-computer and somewhat dated.

Hamilton-Edwards, Gerald. 1973. In search of Scottish ancestry.
London: Phillimore.
A detailed guide to genealogical research in
Scotland, with some Scottish historical
background. A bit dated, and so does not cover
electronic sources such as data CDs and
websites, which make much of the data more
accessible, but a good guide to the main
sources and what one may find there,

Herber, Mark D. 1997. Ancestral trails: the complete guide to
British genealogy and family history. Baltimore,
MD: Genealogical Publishing.

Dewey: 929.1
Though the title has "British", the emphasis
is on England and Wales, and Scottish and
Irish records are relegated to a single
chapter near the end.

Hey, David (ed) 2008. The Oxford companion to family and local
history. Oxford: Oxford Univeristy Press.
ISBN: 978-0-19-953298-8
Dewey: 929.107241 OXFO

Though the Baxter one is quite old, It is one of the most comprehensive, and a
good one if you just want one book.
