On a much more mundane level, I've just been eating some very nice
haslet. This led to a family discussion on pronunciation. Suvverners
present said hazlet. East Midlanders said hacelet, as did the butcher.

This whole stream of posts just describes the difficulties in noting any name or place in that time. And as result having to be flexible in searching the period. Its all as heard and then written to best knowledge. Take a surname as Vincent (pronounced the French way) and then tell me the different options to search the area this group covers. In Dutch at least one of the more extreme is Windzand.
