Can anyone help me please. Do you have the marriage certificate? If so, does the given age on that tally with a birth date of 1899? The age info on the death cert is given by whoever registers the death, they may have been mistaken, so checking it against the marriage cert may help to make it more or less likely ( though still not definite)
Does the marriage cert indicate that she was a spinster, or could Burns have been her name from a previous marriage.
What is her father's name / occupation as stated on the marriage cert? That would help to look in the 1901 census, as would any siblings names if you know of any.
Have you tried as many variations of the spelling of Burns as you can think of ( and then think of some more <g>)
Don't know if that helps at all, but they are suggestions you could try if you haven't already.
the pinch of salt taken with the information on the death
registration. IME the birthday will usually be correct but in the
absence of a copy of the birth registration there are usually at least
two persons' memories involved in getting the age/DoB correct and only
one needs to lose count to get the year of birth wrong.
You might also be encountering a change of name between birth and
marriage because Gertrude's mother has (re)married in between and
there is also the possibility that the spelling of the name has
varied. Among others, there are also:-

Gertrude Byrne John, Ada abt 1900 Forest Gate, Essex, England
Daughter [enumerated in] West Ham, Essex
Gertrude Byrne Joseph, Jane abt 1900 Camberwell, London, England
Daughter [enumerated in] Camberwell, London
With the events concerning Ireland in the early 20th century there
were some who changed the spelling of (or all of) their name to a more
"English/British" version (see also "Windsor" and
"Saxe-Cobourg-Gotha") to avoid being recognised or mistaken as
"foreigners".
Another way of the wrong birthplace being remembered/declared is when
the person giving the information quotes the place where someone was
brought up when in fact they were born elsewhere. This seems to be not
unknown when their mother has gone home to her own mother for the
birth or if the family moved soon after the birth and took up long
term residence elsewhere.
Also, don't forget that a December birth might not have been
registered until January, thus putting it in the "wrong" year as well
as the "wrong" quarter. The registrations are listed by the date of
registration not the date of birth.
I have no memories of my birthplace because my parents moved to Solihull when I was 2 or 3 year sold
I was told it was Sutton Coldfield later
