Americans have pretty much stopped eating oysters. They are plentiful in
Long Island Sound but the local oyster men are having trouble selling
them.

About every restaurant in North Carolina caries a warning against eating
shellfish.
That kinda puts a damper on things.

After the oyster populations crashed people got out of the habit. People
used to eat a *lot* of oysters in the eighteenth and nineteenth centuries,
mostly from the lower Hudson and the Chesapeake. They were extremely
cheap, a penny a dozen or cheaper.

I still remember fresh shelled oysters on the half shell and flavored with a
bit of lemon juice, salt, and Texas Pete.
