It depends on what it is. Certain items (like spices), I seal up and put
away in my Pesach storage boxes. Or if I have something that I never opened
(like an unopened canister of matzah meal with the seal still on) or a can
of something, I'll put it away for next year. But something like an open
box of matzoh or half used can of matzah meal...I leave that in my regular
cupboard and try to use up during the year. If any of that is still left the
next Pesach, I would assume that it had be contaminated with chametz and
would not use it. For health and safety reasons, I try to mark dates even on
unopened things. Keeping an unopened can or box of something for one year is
one thing, but I would not want to use a 5-year-old jar of KLP mayonnaise or
canned pineapple, even if it had never been opened.
