I don't have to accept that. Religion gives us the tools to cover all
aspexcts of life. With the exception of Fundamentalism, religions have
living traditions for this very reason. Halakhah has mechanisms for
dealing with new situations.

Babies brains have the same structures as an adult's. An animal's brain
differs in areas associated with self identity. Just because they
look like there is an "I" in there who suffers because of the pain
doesn't mean there is one. After all, how many of us fall into the
trap of thinking about what a computer program "wants" or that it is
"acting maliciously"? So we know we can assign consciousness to things
that aren't just because the complexity of their behavior triggers our
anti-solipcism (anti-autism?) reflex. An animal is far more complex
than that program, maybe it's just a far better illusion?

Why do we need to give animals the benefit of the doubt? Whether one
needs to be kind to them for their sake or for one's own, the result is
the same. They don't benefit either way.
