You can't necessarily see all parts of a flame. Perhaps the flame is
there, but in the infrared?

That's true, it's possible that the flame is there but we can't see it.
But I can imagine several ways to build an apparatus that doesn't have a
cloth wick at all, but nevertheless burns alcohol at least. Oil might be
more difficult to demonstrate because I suspect it'd be more of a
challenge to show the vaporization, but I'm sure it could be done.

I'd hesitate to try a steel wool wick, as Moshe asks, since I think steel
wool would be MORE likely to burn than a cotton wick, not less. But I
think it could be done, esp. if you made capillary tubes out of the steel,
or ran the oil down the sides or something.

I thought the evidence was that the middle of the flame is redder, which
implies lower energy, than the yellow that is the bulk of the flame or
the higher-frequency light generated at blue edge. IOW, even if there is
an infrared core to the flame, it's lower energy than the part you could
see. (Now, if you want to entertain that it's ultraviolet, despite that
reversing the general direction of colors...)
