Hi, Everyone;
I will be teaching a cooking oriented series of classes on how Jews
around the world celebrate Shabbat, Pesach and Rosh Hashanah. Any
recommendations for resources, both cookbooks and other sources
(history texts, articles, even fiction which is well researched and
documented), would be greatly appreciated. Am hoping to include how
regional ingredients and culture have influenced the traditions for
these holidays.
My thought would be: Look to the Sephardim! Oftentimes, Ashkenazim
tend to lump Sephardim into one homogeneous mass which eats rice on
Pesach. As a member of a Sephardic synagogue, I have learned that
there are many differences (in terms of culture, minhagim, etc)
between the Moroccans versus the Iraqis versus the Iranians, versus
the Lebanese/Syrians versus the Yemenites, etc. For example, only some
Sephardim eat rice on Pesach. The Moroccans do not. If you are
interested, my shul has a Sephardic cookbook (fundraiser) which is
divided by culinary traditions of various countries. Additionally, the
Joan Nathan _Sephardic Cooking in America_ and _Jewish Holiday
Cookbook_ give a lot of unusual and authentic recipes I hadn't seen
before and also provide a lot of history. For a non-cookbook about
Sephardic laws and customs, try _A Treasury of Sephardic Laws and
Customs_ by Rabbi Herbert Dobrinsky. If someone were teaching a class
about Sephardic Jews, this book would be the backbone of the class. It
describes how various Sephardic groups celebrate holidays, life cycle
events, historically and currently, and also discusses many customs
many of us have never heard of.
I envy your teaching a class such as this. I wanted to do something
similar in my community, but I was blown off. Good luck!
