There are many who do not thing the early Hebrews necessarily
tried to avoid it, although the post-Exilic ones did. They
would have considered "Elohei Avraham" as "God of Abraham".

Once again that's a description, not a name. Like "Mike's father" or "King
of England."

It is a description, but "Elohei" means "god of". I
believe the same phrase is used for pagan gods.

One more thing to add on to this: naming something makes it finite,
because the name "encompasses" (or perhaps encapsulates) the named.

I am not sure what the theological infinity means, but no
mathematician would agree with this statement.

No? Let's call this characteristic of God that we're talking about "echad"
-- meaning ultimate and complete unity. Definition, naming, identity etc.
are the opposite of echad - they always create at least two: the thing,
and not the thing. The set, and the empty set. I think that's in accord
with mathematical theory, isn't it?

If anything, it seems the opposite. Infinite in mathematics
means essentially too large to be counted or measured, and it
is in more-or-less this sense that the attribute is usually
referred to in the case of divinity.
