Since the overwhelming majority of people aren't allergic to shellfish,
I do not think assuming you're in the majority is a prohibited level
of risk.

BTW, I have kept kosher my whole life, and don't even like the smell of
seafood (or most fish -- even lox and herring). But I know I'm allergic

Shellfish allergy is actually an allergy to iodine. We've discussed
this before. Salt doesn't have enough iodine to cause a reaction, but
CAT scan contrast does. As I learned the painful way.
