Re: KirschWasser Questions.

Hallo Blake:

I have become interested in trying out some traditional Kirschwasser,
and I have read that there are newer sweeter varities. If you have a
spare moment wont you please share your opinion about a marketed brand?

As far as I know there are no sweet variations at all, but of course
this depends on how you define "sweet". You know, Kirschwasser is some
kind of Schnaps, so it is burned (gebrannt, destillated) like other
Schnäpse will be, too. So no additions of sugar are allowed at all.

Which is best for cake?
Best for imbibing?

Well, that's a bit difficult to say. Just keep in mind that the quality
of destillating would be the most designating factor along with the used
cherries, so there would be just one tip I could give: First, look at
the producer, second, look at the price. Do not buy cheap ones, the
differences in quality are remarkable.

So I would recommend you buy Kirschwasser from a producer who is
situated in the black forest (Schwarzwald), as the Kirschwasser of that
region is presumed to be the best. Keep in mind it has to be marked as
"Schwarzwälder Kirschwasser", as that is a protected mark.

Some producers would be Schladerer, for example, but there are some
others I cannot remember right now. There are also many farmers who have
"Brennrechte" (destillating rights), but their products are rare and
hard to get.

Hope that helps,
Christian
