You get the youghurt, put it in a piece of cloth - I'm using an old handkerchief, then in a strainer, a large coffee filter or something of a kind. Let it drain for a while - say 5-6 hours until it loses half the volume. That's all.
Hi,
I'm american and recently visited bulgaria. While I was there one
of the wonderful things I ate was this creamy cheese & yogurt
liquid....we mixed in pieces of roasted pepper and at on slices of
bread...mmm... Does anyone know what that liquid of cheese and yogurt
is called? Does anyone know where to get it in america? Thanx for
any help you can provide. Peace
That sounds like a difficult question. I do not know of any cheese & youghurt mix, unless it is some "innovative" product, but there is a type of youghurt started with white cheese as a fermentation yeast, instead of the youghurt yeast. It is called "katak" or "krotmach", a product that probably goes back to the proto-Bulgars. I've never had it outside of Bulgaria and, even in Bulgaria, never seen it in a shop, but had it always home made. It is really good true. I guess you won't find it in the States, but it should not be difficult to make at home. At least if it is as easy to make as youghurt, and that is easy. May be someone will give the recipee for katak?
Add a lot of garlic, salt, pepper, dill and a fresh cucumber, cut into small pieces and you get a clasic bulgarian 'whitesnow' salad. Use baked red pepper instead of cucumber if you wish. Or baked/fried aubergines.
Use with a lot of bulgarian slivovitza :))
