That change is usually gradual.

The other thing is that once an older edition of a particular textbook
goes out of print, it becomes a lot more difficult to find a large

of the older edition. This is especially relevant for courses which
have several dozen or hundreds of students enrolled. The only way to
get a guaranteed large quantity of a particular textbook, is to order
the latest in-print edition directly from the publisher.

For example, to order something like several hundred copies of the
first edition of Halliday & Resnick on short notice these days, it
would be quite difficult to pull off for the most part.

Publishers know this very well.
