My firm creates interactive light experiences and we often commission
custom LED fixtures from large and small vendors. Recently I have
been warned away from "anyone using Chinese LEDs" by trusted sources.
My sources, however, are somewhat vague when asked why this is, is it
infant mortality, color temp irregularity, DOA problems, etc? We are
unconcerned with color temp shifts, but are of course concerned about
infant mortality and lifespan issues.

Can any forum members give me concrete evidence as to why I should not
consider Chinese LEDs and instead use Japanese products? Everyone
tries to sell me on Nichia as the gold standard. Should I draw a
distinction between mainland Chinese vs Taiwanese products?

Why would you think this is a country or region issue rather than an issue
involving individual manufacturers and their production or quality control
processes?

My experience with a lamp manufacturer who went into various countries and
regions to source products is that you look carefully at individual
companies, establish personal relationships, visit facilities, check quality
control procedures and otherwise do your "due dilligence". Then you qualify
the company and continue to check products to be sure they don't slip. It's
hard, time-consuming work; but much better than listening to rumors or
throwing an order onto the internet and waiting to see who bids.

Buying name brands can perhaps shorten the process and maybe give you some
confidence in the product. Such companies also try to protect their
reputations and typically offer product service in case of problems. But
you may pay a higher price for the product.
