Right,in the future I will be looking at resting voltage for the
remaining battery capacity. That brings the batteries closer to their
AH specs.

The voltage will rise a bit instantly when you remove the load, due to
the IR drop through the batteries' internal resistance being removed.
Then, as you leave the batteries for 24 hours, the voltage will likely
rise some more as things settle down in the battery.
Then you may find that you're still well above 50% charge, because the
table of voltage vs. capacity you are using is probably resting
voltage.
