Just an example who POSSIBLY wrong the other answerers can be....
First of all, aluminum mast weighed around 6lbs in the old days.
Your newer 50% carbon might weigh ONE pound less, if it's lower
carbon, less than one lbs. difference.
A old 6.4 GaastraRacefoil from 1988 weighs right at 7lbs. A new V-8
6.5 right around 9.5 lbs. Combine the two and tell me the new stuff is
lighter in weight.
As for the board volume, some of those guys are elephants who
windsurf once a month, or once a week, and had no physical ability.
Every surfer I taught to windsurf, and they were expert surfers,
jumped right into a 90-100 liter poly glass custom within a week of
their beginner lesson.
Now you can learn the traditional old fashioned method, ......
longboard, Equipe, 10'6" transition board, 120 freeride board, 100
liter freeride board, then a higher wind board, or you can skip all the
intermediate steps.
It's up to each individual to decide how fast they can learn...if the
live in a windy spot, or how SLOW they can learn, by taking decades to
decide to switch to small gear (105 liters).
But as my first post said, IT ALL DEPENDS ON YOUR EXPECTED WINDS!!!
