I'm not aware of any mainstream applications that implement
capturing multiple video inputs, not to mention separate audio
concurrently. But perhaps that is because most home computers
(likely including yours and mine, too) aren't up to the task.

I'd also like better video quality than what this little Sony
DV gives me (the resolution is something like 674k).

That is already more than you need if you are going to
compress the video down to something that will be useful
on a website. Don't get your heart set on "better video
quality" if you are distributing via the internet. You'll need
well-framed close-up shots if you want to show viewers
how to play the guitar, etc.

If you want to produce the videos by live capture with
multiple cameras, you'll likely need to do live-switched.
But with only 2 cameras, perhaps you can do it with a
foot switch, etc? OTOH, there may be some multi-
camera solutions that use USB webcams, etc. Since
you are going for internet distribution, full NTSC
resolution is just getting in your way.
