Nobody is disputing whether something would be useful.
The limiting factor is the technology it takes to implement
it, vs. the market it takes to make it worthwile to develop
and sell.

I've done a bit more digging online and came by this

which does exactly what I need, it'll probably be more
than my £500 though. :-)

But if the MSRP is 1000 USD in the US, then the UK street
price could conceivably come somewhat close to 500 UKP?

60 FPS is only 2x speed. (Well, maybe 2.4x over there in
the PAL territories). Most wouldn't call that "high speed"
It might be capable of 1200 FPS @ 336x96, but can it run
for even a whole second at that rate?

Note also that digital still cameras can record video for only
very short durations because of the space limits of their flash
ram cards. But perhaps that is all you need (since you didn't
state your application)?
