The issue may be that the color subcarrier timebase is to jittery for
the converter to lock onto. It's easier for a TV because it can just
change it's clock speed at will to match. A converter has to stick
to the digital clocking, unless it has added memory to transfer things
at different speeds between the analog and digital sides. It may need
a more expensive converter like the ADVC-300 (uses Firewire).

Or maybe S-video connections can help.
