Help me build a Workflow setup

I bought a Canon XH A1 Camcorder and tried to use it with my Inspiron
9400 Laptop but could not Capture or play HD Video without stuttering.
It works fine in SD and with a Compact Camcorder. Laptop is 2Gig Dual
Core, 2 Gig Memory, 256Mb nVidia 7900 Video Card. I tried several
Video Editing Programs without success.
So I ordered a new Desktop;
XFX nForce 780i SLI, nForce-780i SLI, Motherboard,
Intel Core 2 Duo E6850 3.0GHz 1333Mhz FSB Processor,
2- Matched Crucial DDR2 PC5300 4096MB CL5, 8 Gig Memory,
2- Gainward GeForce 8800GTS 512MB GDDR3, SLI Video Cards,
Raptor X 150GB SATA 16MB 10000RPM Hard Drive,
24" LCD Syncmaster 245B, 1920x1200, Monitor,
19" LCD Monitor,
800W Power Supply,
2 TB of USB External Hard Drives.
I will be getting a Blu-Ray Burner but want to use HD DVD for now.
I have not received the Desktop yet but I assume it's going to be more
than adequate for Video Editing. What I want to do is;
1/ HD Stock Video, up to 30 second clips in MPEG and AVI, simple clean
clips in 1920 X 1080 with no editing.
2/ Produce my own HD DVD's.
I have Adobe Premier Pro and several other Programs but my questions
are;
If you had this setup, what more do you need in terms of Hardware and
Software?
What Formats are best to use? is MPEG and AVI best to work with if I
plan to convert to DVD?
The reason I ask is that I see some people are using external Analog >
Digital Converters like Canopus, I'm not doing Analog but is there any
advantage to using it? I would appreciate any advice, Thanks in
