I just wanted to insert my opinion here and say that I recently
purchased Pinnacle Studio Plus 11, and it is fantastic and does
everything from assisting with capture, to editing, to menu creation,
to master DVD creation..

First, you have to convert the analog 8mm signal to digital by any one
of several methods.
You can play your analog tape into a digital camcorder which can
convert it on the fly to digital and onto mini-DV tape in the
camcorder. Then play the mini-DV tape into your computer by firewire.
You can play your analog tape into a digital camcorder which can
convert and "pass-thru" the digital camcorder directly into your
computer by firewire.
You can play your analog tape into a format converter, such as a Sony
DVMC-DA1, or similar, which will also transfer the digital signal into
your computer by firewire.
Each of these methods assume you have an analog player, such as an
analog HI-8 camcorder or analog Hi-8 VCR, AND a firewire port on your
computer to receive the digital signal.
Once "captured" onto your computer, you can use apropriate software to
edit and convert to DVD format, and burn your DVD.
Another alternative would be to play your Hi-8 tapes thru either a
camcorder or vcr into a stand-alone DVD recorder, which could generate
a DVD on-the-fly. This last method might be the cheapest in the log
run, but there would be little opportunity to edit or embellish the
DVD.
If you are simply trying to "save" the video for posterity, and are
willing to live with accidental shots of your feet, etc., this last
method would be my recommendation.
If you are trying to edit out the bad spots, add elaborate titles,
special effects, etc., then you need to get your footage digitized and
into your computer as indicated in the earlier part of this post.
