Two of the most popular hdtv capture cards seem to be the ATI HDTV
Wonder capture card, and the Hauppauge WinTV-HVR 1600 card.

I'm not familiar with either card and don't have time right now to
look up the specs, sorry.

People say
the hdtv they capture is great, but I don't understand how it can
capture true hdtv if they only have S-Video and Composite inputs.

If the cards in question have but S-Video and Composite inputs, then
they can only capture standard definition signals. They will not be
able to capture high definition signals.

I understand the antenna input might get true hdtv.

In that case, yes, using a built-in ATSC tuner.

But otherwise I
thought you needed RGB Component inputs, HDMI, or DVI?

Or HD-SDI.

Can you really capture excellent hdtv through S-video?

You can't capture HDTV through S-Video (Y/C) at all.

Oh I see so these cards are made to capture signals directly from your
over the air hdtv antenna, satellite antenna, or cable feed. Do you
know whether the newest hdtv satellite receivers have an output that
can connect to this antenna input in these capture cards? I doubt it,
I think the only way would be to capture a direct feed from the cable
of these sources.
