The software I use allows you to author the DVD to a folder on the hard
drive. It can then be played to check menus etc. Then that folder is
burned to DVD.

In my area there are very few places that sell dual layer discs and the
few that do are very expensive. I usually split the project and put it
on two single layer DVDs.
