That's a good idea. You might want to do a Google search for
supermarkets in the areas you'll be staying, and then make a note of
their locations and hours on a map. That way you won't waste time
looking for one, or risk getting lost if a hotel clerk gives you
incorrect directions. And don't forget paper plates, plastic utensils,
and napkins or wetnaps.

Consider hiking at Point Lobos, a park located a few miles south of the
Monterey Pennensula. They've got hiking trails with dramatic ocean
views.

And January is a good time of year to hike in Death Valley, as you
avoid the oppressive heat they have most of the year. You mentioned
that you're retired, so I'll add that some trails are very challenging,
so be sure to do a bit of research first or get advice at the Vistor's
Center if you'd prefer one of the easier trails (Golden Canyon, for
instance).
Also, I'd highly recommend the "17-Mile Drive", a scenic road around
the coast of Monterey. You have to pay an admission fee to drive on it,
but it's well worth it.
