Hi all,
....

Does something like this sound even remotely feasible for 14 days? Any
thoughts? Suggestions? Am I crazy?

Thanks!
Jason

Your itinerary seems very feasible. How many will be travelling? If you're alone or on a par, you can rent a Renault Clio/Peugeot 206, it will be very fine (or a foreign brand if you want, I'm not chauvinistic! :-)

If there are more of you, I'd recommand a slightly bigger vehicle (Mégane/307).

You may already know that motorways are of very good quality in France, but some are infuriatingly expensive (the A10 wins the pompon!)

Plan a big budget for gasoline. Petrol is 1.25/1.3€ a liter outside cities and gas-oil €1.05, and price have been but soaring up.

And don't be afraid by French drivers myths... an the whole, we're civilised!
