My math is a lot closer to correct than yours. If you think you can
double your best 4k time and use that as your estimate for an 8k time,
you're wrong.

I'm an average person. I'm an average masters swimmer. At age 56, if I
could train 5x2hrs per week, in seven months I could go 8k in open
water in under three hours.

It usually takes a few lessons to learn to swim, maybe 20 one-hour
lessons over a summer. It took you two years? Why did it take that
long? What are we dealing with here?

You're saying you were pushing hard to finish 3k in 2hrs. That's 2.4
seconds per meter. You are 25 years old. You are in the prime of your
athletic life. Do you have a muscle problem?
