Cannot address the iPod video as I don't care for their internal battery
design, but I do and have used an Archo's AV series player/recorder to shoot
videos with a plug-in lipstick-sized camera with RCA plugs that plugs into
their adapter which plugs into the Archo's audio/video port. It has a bunch
of user settings to control frame (speed) rate, screen size, and the like.
Most any of the small video cameras work with it with a composite video
output. You get a nicely compressed AVI file out of it when done - not
exactly still digital quality though. My camera is maybe an inch in
diameter and maybe three inches long. Not too quick in aperture change if
accidentally pointed into the sun (I use a hood on it). Night vision is
also poor. It has two cords: a DC one and a video out cable (newer ones are
integrated into one). Sound, if you want it, needs to be added via a
microphone and maybe a mike mixer or amp depending on the type of microphone
(battery powered or not).

I use the Archo's as it has a snap-in battery and it runs a lot longer than
the iPod which I find isn't as portable on things such as motorcycles and
the like. Costs a lot more than the iPod, but it also does a lot more too
and was intended to do what you want. The camera I have requires an
external battery source (a bunch of AA sized ni-cads or metals) which also
runs a long time. I find the wider-angle camera lens to be the best
overall.

There's a bunch of helmet camera sales sites if you Google for them. But
yeah, you're right, not much on the iPod video camera support.
