The difference is what's being judged. In skating/gymnastics/dancing
etc. it's the form of the physical action you're performing.
When playing an instrument, it's the sound that's judged, not the
physical actions one performs to obtain them. Well, to amend that
somewhat, some people get pissy about embouchure formation (the way you
address the instrument with your mouth on brass instruments), which can
vary quite a bit, posture etc., but overall, it's the sonic result
that's most important.
Most competent teachers will tell you that a good embouchure is one
that works - i.e. nets you a good sound, good technique, endurance etc.
Symphonic auditions are held behind a screen to (supposedly) focus the
attention strictly on the sound one achieves. Realistically hasn't
stopped racism and sexism and various other biases from entering into
the picture but that's the theory anyway.
There are of course musical contests.
