Track wires the blocks to detect a shift in weight. That would be more
straighforward.
They could set their front or rear skate on a wired pad, or string,
wire etc. Once the race starts, they would have to yank them off the
ice.

That would really screw up their start, I think. Can't interfere with the blade/ice interface.
Perhaps magnetic sensors attached to the heel, which detached when the racers took off, or an electronic eye system. Which part of the skater would you focus on?
