You can go back to eating it raw, Joey. Cooking doesn't destroy the things
that cause mad cow disease (nor does much else).

The exact cause of Mad Cow (Bovine Spongiform Encephalopathy) has not been
determined. Scientists do have a good hunch that BSE is caused by an
abnormal infectious form of proteins known as prions. Prions are found in
all animal species it is only the abnormal prions that cause BSE. The
infectious prions initially accumulate in the spinal chord, nerves, brain,
tonsils and intestines of cattle, and eventually affect other tissues.

Humans are affected by Creutzfeldt-Jacob Disease (CJD) which is very similar
to BSE. A variant form of CJD is believed to be caused by eating beef from
BSE infected cattle. The one known case of variant CJD in the US was a woman
who got it while living in the UK and then returned to the US.

BTW, cattle got it from being fed animal protein from sheep infected with
Scrapies (which is the sheep form of spongiform encephalopathy). The
primary components of the high protein sheep based supplement were brains,
nerves, ground up spinal chords, intestines (and all that other yummy organ
stuff).

Cooking does nothing to prevent BSE / vCJV because it is not caused by
typical bacterial or viral agents.
