You are absolutely right - "can usually compensate". Some do, some
don't. Some do better, some do worse. Doctors and nutritionists are
beginning to acknowledge that the human species has much variability in
how our bodies react and utilize substances in our diets. A specific
diet works for some but not all. Carbohydrates are inflammatory agents -
a good portion of wheat is a carbohydrate. To directly apply this to the
body: it appears some of us don't tolerate vascular inflammation very
well which may lead to heart disease. The inflammation may cause
irritation in the blood vessels that may develop into plaque sites.
Coronary plaques can rupture and block the blood flow to the heart
muscle.
As an aside, as I recall, a survey showed that a majority of heart
disease patients also suffer from arthritis - another inflammatory
disease.
Just because you, your neighbor, high school gym teacher or probation
officer appear to function well on a certain diet doesn't mean that
everyone else will. It could very well prove to shorten others' lives.
