I am choosing the S5 unless the FZ18 turns out to be great. I also thing this is the last rev of the Canon S. I think they will come out with a new lens and a new sensor next time but they do have to hold back as to not canibilize their Rebel.
It's typically been a recipe for disaster when a company tries to not offer certain classes of products for fear of cannibalizing higher end product sales. Some other company will rush in to fill the void left behind, and the result for the company that tried to manage their product line that way will be no sale at all.
The S5 has lower battery life, a lower burst rate, no intervalometer, and higher noise. Withe the CHDK software for the S3, you also get RAW mode, something that isn't possible on the S5.

I like the hot shoe on the S5 very much, but I don't care about the larger LCD, especially because it's probably the reason that battery life is shorter on the S5.
I wouldn't get your hopes up on the FZ18. The first sample photos are not encouraging. However no indication of how it looks if you use RAW mode. It's the age old Panasonic problem of noise and poor noise reduction firmware.
