When I made the switch from film, I immediately started with RAW. But
30+ years of doing photography (about half professionally) had already
equipped me with the necessary knowledge.
As for fiddling at the computer, I just open the image in PhotoShop,
bring up the shadow level, maybe tweak exposure slightly, sharpen...and
that's it. It just takes a minute or two.

If all you do is make such modest adjustments, I don't see how raw
benefits you at all.

Try turning down the exposure 1/3 stop with a jpeg image, very easy
using raw but not so easy with a jpeg image. Or try adjusting the
color temp from 4700K to 5100K, again very easy in raw not so much in
jpeg.

Or let's say I want just a bit of noise reduction on shoot taken at
ISO 800 and a bit more for shots taken at ISO 1600 but none for shots
at ISO 400 and below, I can set up the raw converter to automatically
do this for me. I don't have to set the noise reduction for each
image one at a time, I can tell the converter how much I want for each
range of ISO.
