If the AF eventually gets it after the hunting, let it do so with the
camera on a tripod, then adjust accordingly.

Your understanding of the Eyepiece dioptre setting is a little flawed.

This setting will only make your view of the focussing screen more or less
sharp. It should be set so that the VF Info and markings on the Screen are
as sharp as they can be.

If your Dioptre setting is wrong a well focussed image may not look as sharp
as it actually is.

BUT -- It can NOT make an out of focus image look sharper than it actually
is.

I understand that the tiny view through the eyepiece may not reveal
fine focus the way pixel peeping will. A not-quite-focused image may
well appear focused enough through the eyepiece.

But yes, the standard method is, of course, to focus on the info
displays, if there are any. (And I guess there are on pretty much all
cameras these days.)
