The original recipe kept pretty well for a couple of days in the refrigerator. The cream cheese protected the cookie base well enough to keep it from getting soggy.

If it were me, I'd get the base done and "frosted" and then just have the rest ready to throw on top when it's getting close to time. My big concern is the bananas turning brown - although covered by the red glaze, that wasn't a problem. But fresher is better.

I'll definitely add nuts. I think the textural contrast will be good.

Definitely nuts. I think they would have even done well on the original.
