you are correct, i meant to say strands of protien... if you try and make
bread out of another grain flour like rice or soy it is very dense and
doesn't rise without assistance like vital wheat gluton and... dyastastic
malt,sp, am just beginning to learn about this for bread baking and DH's
sister... it is very interesting but well above my brain's pay grade, Lee

If you're googling - "celiac disease" in American English, "coeliac" in
the rest of the world. Gluten isn't fibre - it's a group of proteins
called "gliadins" which evolved to protect the seeds of wheat-family
grains against extreme cold (these grains originated in the mountain
regions of India, Pakistan, Afghanistan and Iran). Gliadins are tough
and resistant to digestion, so they pass through the stomach unchanged
and (in susceptible people) cause immune reactions in lower parts of
the digestive tract. Diarrhoea, malabsorption, damage to the gut wall,
resulting leakiness that lets other toxins through so you end up with
immune/allergic reactions to all sorts of other stuff.

My Splodge seems to have it, though there isn't much documentation on
coeliac disease in cats. If he ever eats tinned cat food in gravy,
or one of the other types that lists "cereals" as an ingredient, he
gets horrible smelly diarrhoea. He always does it in the bath when
that happens. I can tell he's eaten something he shouldn't the moment
I come home and open the front door - the smell permeates the whole
house so I know to make an immediate dash for the bathroom (holding
my breath) to spray bleach around and clean it up.
