We noticed that there were chorizos for the first time in the deli. Having
heard Victor mention them, we got some, but had no idea what to do with
them.
First of all, I tried to fry them, like I would regular sausages. This
didn't seem to do anything besides make the outside brown.
So then I sliced them up and used them as a replacement for 'murder in the
snow'. Murder in the snow is chunks (I want to say 'cubes' but they're not
in any way cubic) of sausage that is cooked in a sauce of canned tomatoes,
onion and green capsicum, with garlic and various herbs with a bit of chilli
thrown in. The sauce & sausage mix is then served in a 'well' made out of
mashed potato so that you get a ring of white around the outside of the
plate, and the sauce in the middle. Looks like a gruesome murder scene with
the bits of sausage, onion & capsicum floating in the tomato sauce,
splattered across the white of the mashed potato.
But when I tasted the sauce with the chorizo chunks, I thought it would be
better served over rice than mash. So I did. And it was delicious! Even Cary
thougth so. we'll be havign that dish again (its better than 'normal' murder
in the snow, too!)
Victor, thankyou for telling me about chorizos, and any other recipe ideas
for chorizos would be welcome.
