Well, that is excellent progress already! Most parrots love getting their
head scratched, so continue getting him used to having your finger near his
head. Keep trying to gently scratch his head and neck, but don't touch
anywhere else (such as his back, chest, feet, etc.), because generally,
birds don't like that at all and will bite you.

Keep trying with the fruits and veggies, don't give up yet. Eat some of
them yourself, right in front of him, show him how yummy they are, maybe
that will attract him to try them out. My Orange Wing Amazon was terrified
of bananas, just seeing one made him growl and run away, but eventually he
tried one and they became his favourite fruit.
