My sources, which I gather gives the German(ic) tradition, are equally
clear:
time 2, 3 are simple, the others are compound. The normal 4 is
compound.
So unfortunate choices of terminology. We need to understand that some
people may use Compound not to refer to the division of hte beat, ...
Right, especially since the meter notation does not imply any divisions
(or subdivisions) of the beat for the meters 2, 3, 4. :-)
They are understood. 6/8 has a triple division, 2/4 a binary. It's just like
you have to know a key signature of 3 sharps might be A Major, but it might
be F# minor, and it might be something else.

7 is septuple simple if it is:
1 & 2 & 3 & 4 & 5 & 6 & 7 &
If it is in 7, there are no &'s :-).
No. It is in 7 if there are 7 BEATS. Period.

I don't see any clear pattern for this. I think one didn't think about
more complicated metric patterns when making this terminology up. :-)
Well it was developed for western classical music. There is no asymmetrical
meters. But the principles still follow.

But the CPP meters 3, 4, 6, 9, 12 all have secondary accents. So you
reasoning does not work in those cases.
2/4 and 3/4 have secondary accents? where?
4/4 does as does 12/8. But that's all.
Here is 6/8 Asymmetrical:
1 2 & & 3 &
So is it because it is not symmetrical under time reversal or what?
Again, Asymmetrical means the beats are of unequal size.
