I'm interested in studying Medieval Counterpoint. There's no course on
it at my school (University of Toronto) any more so I thought I'd ask
if there are any standard texts on it.

I think there are no standard textbooks for the very simple reason that
it's
not a standard subject of instruction. There isn't even room to do both
16th-century and tonal counterpoint properly in most undergraduate theory
curricula these days (and perhaps there never has been) -- and no room at
all for medieval.

Agreed. I didn't study "modal" and "tonal" counterpoint until graduate
study - undergraduate was a broader "counterpoint" based largely on
Renaissance style through modern tempered glasses.
