After struggling to read a double flatted B, I finally took some white

I would let it go if it happened a few times, but not if you did it all the time.
A G-flat minor chord should be written with the B double flat rather than an A natural. Why? Because otherwise the interval of a minor third from the G-flat note to the A natural note would look like a second while feeling and sounding like a third. Letting you get away with substituting an A would hurt you as a sightreader in the long run.
Another confession: I also drew parentheses around some notes in tie
situations.
As before, that's fine as well if it helps you for now, but I would seriously worry about your ability to advance as a player if you are still needing this crutch a year from now.
I encourage students to mark their music if it helps them learn the piece, but let's extend this line of thought backwards for a moment. What if you needed every letter name written out above the staff? What if you needed every note duration written out before you could play the right rhythm? Etc.
The point of notation is to give you the ability to play a song with the least amount of clutter on the page. If you have to re-write or modify notation frequently, your time would be better spent forcing yourself to deal with it as it is written. It will make you a better player in the long run.
