Enter media monkey. It imports the music but leaves your mp3s alone.
You don't have to convert them. It uses id3 tag info but can also
organize and allow you to find your tunes based on any text string in
the directory structure or filename and can automatically embed id3
tag info into the tunes and even download them to an apple (iphone)
device.
Plus, it's pretty well written and doesn't crash or hang like itunes.
I only use itunes now if I want to purchase something from them.

iTunes can do the same. That's how I import from mp3's emusic.
