If I remember right I would pay $16.95 for absolute Vodka, there are approx 25 oz. in a .750. I charged $6.50 a drink for a premium liquor, we tried to pour 1.250 oz. drinks.
House wine depended month to month on the best buy I could get for a decent wine in quantity. Usually I could get wine at from $2.50 to $4.00 per bottle, I sold it at $7.50 per glass, there are 4.5 glasses in a .750 bottle.
Bottled water was an off brand purchased for .69 cents each and sold for $3.50.
Liquor is always the "cash cow" and generally supports the food sales.
You guys can do the math.

btw, what's the profit margin on booze, soda pop & designer water?
booze -- about 300% and up
soda -- likewise
water -- 400%
Beverages and deserts is how most restaurants stay in business.
