Oh dear, I shouldn't say this but I have had one or two this evening
so here goes.
They are just capacitors. In an environment such as electric guitar
which is predicated on distortion in the pickup, amplifier and
loudspeaker, there is no way in which any capacitor of a given value
behaves differently from any other of the same value. You are deluding
yourself.
I've been through all this fine detail of the sound stuff so I know
that the sound of the guitar is important but, really, there comes a
point at which you just have to pick the bloody thing up and play it.
You will soon observe that it is completely unimportant whether the
tone circuit peaks at 600Hz or 620Hz or whether the second harmonic
distortion is 5 percent or 6 percent. You are worrying about 5 percent
or 5.001 percent!

Armed with a soldering iron, a bunch of caps and a decent pair of
younger ears, I can prove you wrong. I've had allsorts of
combinations of caps in my tone stacks and they make a difference to
the sound.
Another proof is the Marshall sound compared to a Fender, both using
basically the same circuit. The Marshall has more Treble, more Middle
and more Bass.
Fender
Slope Resistor = 100k
Treble = 250p
Bass = 100n
Middle = 47n
Marshall
Slope Resistor = 33k
Treble = 470p
Bass = 22n
Middle = 22n
