I was in catering for years - what do you do?

When we had the pub my stock all-day breakfast was:

Two rashers good bacon (back, or at worst, middle) grilled.
Two good sized pure pork sausages or three chipolatas (also pure pork)
Two eggs, fried sunny side up (runny or hard according to the order)
or scrambled - if I could get them I'd use duck eggs, which at my
local tobaconnists (go figure) were the same price as free range
chicken eggs - and much tastier - nearly all duck eggs are free range
and sumptuously rich.

The rest depends on the order:

Baked means, fried mushrooms (done in a saucier rather than a frying
pan - they get a little more juicy that way but still nice and
buttery.

Black pudding.

Toast with real butter, jam or marmalade. Beverage (separately billed)
of choice.

Bread fried in the sausage fat or a couple of white sliced triangles,
buttered, on the side of the plate.

VERY different from what you'd be offered in a Holiday Inn or
Marriott...I hate American hotel breakfasts - the bacon splinters
across the room when you put a fork into it, the sausages are usually
small bullet-sized things that taste as though they came from
somewhere in Mexico, the scrambled egg is nearly always made from
powder and if you ask for something off the canteen menu you get a
very curt "Have a great Day." usually said through the corner of the
serving-person's mouth as they turn their back on you when you say
"Thank You."

At least, that's what you get at the Nashville airport Marriott at any
rate....

I think 12 trips over four years during which I ate out for nearly
every meal gives me some right to an opinion, Raf.

Some of the food was amazing - had an astonishing meal at a beachside
restaurant in Maui, the best Chateaubriand ever in Nashville, pretty
good food even on Beale Street in Memphis (although the steak at BB
Kings place took an hour to arrive and was naff) . - but nothing good
in hotels. We had to stop over at some hotel when our flight out of
Nashville was cancelled one evening. The wife ordered sausages & mash.
Sausages were great - the mash was Smash.

As far as the trips themselves were concerned, they were great. Loved
them all.
