The preamp sections on any "studio in a box" device are basically crap
which is why you are having so much trouble. No microphone is going
to perform properly through that sonic slush. The tinker toys found @

Go audition the preamps offered by FMR Audio, Great River Electronics,
Speck electronics, to name a few, to hear the huge difference a
quality mic pre makes.

I use a Yamaha AW16G, and with a little care get some decent clean
recordings at the required volume.
And my mics aren't flash either.
Yes, but you are greatly restricted in mic postioning, since you need
enough gain to make it all work. Better preamps relieve that
restriction.
Of course, then one might need to deal with the room, or get mics with
an excellent hypercardioid pattern.
Putting identical mics that are as close to the same position as
possible, and that not being closer than about four or five feet from
the guitar, into different preamps, even really high quality ones, can
let one experience the differences made by various preamps. Putting
one's clunker in there will often shock one's ears. It all sounds good
until one gets to hear what was missing in the previous version of
"good".
